Herbed Chicken W/ Sweet Potato, Mushrooms and Apple
Herbed Honey Lemon Chicken
Ingredients
- 4 Boneless Skinless Chicken Breast
- 2 medium sweet potatoes, peeled and cubed
- 2 gala apples, sliced
- 1 small onion, sliced
- 1 cup mushrooms, sliced
- 1 lemon, sliced
- Salt and pepper to taste
Marinade
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 tbsp honey
- 1 tsp Dijon mustard
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- 1 tsp dried rosemary
- 2 tbsp fresh parsley, chopped
- 1 tsp paprika
- Salt and pepper to taste
Directions
- Preheat oven to 375°F.
- In a large bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic, Italian seasoning, rosemary, parsley, paprika, salt, and pepper.
- Add chicken to the bowl and toss until fully coated.
- Arrange sweet potatoes, apples, red onion, and mushrooms in a large baking dish or sheet pan.
- Place chicken over the vegetables and pour any remaining marinade on top.
- Add lemon slices across the pan.
- Bake uncovered for 60–75 minutes, or until chicken is cooked through and golden brown and vegetables are tender.
