Easy Chicken Cacciatore

Instructions.

  1. Brown the chicken
    Heat olive oil in a large skillet over medium-high heat.
    Season chicken with salt and pepper.
    Sear 2–3 minutes per side until lightly golden.
    Remove chicken to a plate.

  2. Build the flavour
    In the same pan, add onion and peppers.
    Cook 4–5 minutes until softened.
    Add mushrooms and cook 2–3 minutes more.
    Stir in garlic and Italian seasoning; cook 30 seconds.

  3. Make the sauce
    Pour in tomatoes and ¼ cup chicken broth.
    Stir in sugar and chili flakes if using.
    Bring to a gentle simmer, scraping up any browned bits.

  4. Simmer
    Nestle chicken back into the sauce.
    Cover and simmer 12–15 minutes, until chicken is cooked through and sauce thickens slightly.

  5. Cheesy finish
    Sprinkle shredded cheese evenly over the top.
    Cover the pan and let melt 2–3 minutes,
    OR broil 1–2 minutes until bubbly and lightly golden.
