Easy Chicken Cacciatore
Ingredients
Chicken Cacciatore

2–3 boneless skinless chicken breasts, sliced into cutlets or chunks

2 tbsp olive oil

1 yellow onion, sliced

1–2 bell peppers, sliced (optional)

1–2 cups white mushrooms, sliced

2–3 cloves garlic, minced
-
2 cans diced or whole tomatoes (796 ml), lightly crushed

¼ cup chicken broth (optional)

1 tsp Italian seasoning
-
½ tsp salt
-
½ tsp pepper
-
½ tsp sugar

Pinch chili flakes (optional)

1–1½ cups shredded cheese
(mozzarella, pizza blend, or marble)

White rice or Minute Rice, cooked according to package directions
Instructions.

Brown the chicken
Heat olive oil in a large skillet over medium-high heat.
Season chicken with salt and pepper.
Sear 2–3 minutes per side until lightly golden.
Remove chicken to a plate. -
Build the flavour
In the same pan, add onion and peppers.
Cook 4–5 minutes until softened.
Add mushrooms and cook 2–3 minutes more.
Stir in garlic and Italian seasoning; cook 30 seconds. -
Make the sauce
Pour in tomatoes and ¼ cup chicken broth.
Stir in sugar and chili flakes if using.
Bring to a gentle simmer, scraping up any browned bits. -
Simmer
Nestle chicken back into the sauce.
Cover and simmer 12–15 minutes, until chicken is cooked through and sauce thickens slightly. -
Cheesy finish
Sprinkle shredded cheese evenly over the top.
Cover the pan and let melt 2–3 minutes,
OR broil 1–2 minutes until bubbly and lightly golden.
