Asian Inspired Sticky Ribs W/ Pineapple Fried Rice
Asian Inspired Sticky Ribs
-
About 2.5 Pounds of Pork Side Ribs
Dry Rub
-
2 tablespoons brown sugar
-
2 teaspoons smoked paprika
-
2 teaspoons kosher salt
-
1 teaspoon granulated garlic
-
1 teaspoon onion powder
-
¼ teaspoon ground ginger
-
¼ teaspoon Chinese five-spice powder
-
¼ teaspoon white pepper
In a small bowl, mix together all the dry rub ingredients. Pat the racks of pork ribs dry, remove the membrane on the back (if desired), and cut into manageable sections. Rub the mixture evenly onto all surfaces of the ribs, pressing it in so it adheres well.
Glaze
-
1 tablespoon sesame oil
-
10–12 cloves garlic, finely minced
-
1 tablespoon fresh ginger, finely grated
-
β cup brown sugar
-
½ cup soy sauce
-
β cup rice vinegar
-
¼ cup honey
-
1 teaspoon red pepper flakes (adjust to taste)
In a small saucepan over medium-low heat, warm the sesame oil. Sauté the garlic and ginger until fragrant. Add the brown sugar, honey, soy sauce, rice vinegar and red pepper flakes. Bring to a low boil, stirring continuously, then reduce heat and simmer for 5-7 minutes until the glaze thickens slightly. It will become more syrup-like as it cools. Once your ribs are nearly done, un-wrap them so the top is exposed, brush generously with the glaze, and finish under high heat (or a broiler) for a few minutes until the surface caramelizes and gets that sticky, glossy finish.
