Air Fryer Roast Beef with Roasted Boursin Pasta
Ingredients
For the Beef:
- 
1 small beef cross rib roast (2–3 lbs) 
- 
2 tsp olive oil 
- 
1 tsp garlic powder 
- 
1 tsp onion powder 
- 
1 tsp dried thyme 
- 
Salt and black pepper, to taste 
For the Pasta:
- 
340 g (12 oz) short pasta (penne, rigatoni, or fusilli) 
- 
1 package (150 g) Boursin cheese (garlic & fine herb) 
- 
1 pint grape tomatoes 
- 
1 small red onion, thinly sliced 
- 
2 tbsp olive oil 
- 
Salt and pepper, to taste 
- 
1/2 cup grated Parmesan cheese (optional) 
- 
2 cups fresh spinach (optional) 
Instructions
Roast the Beef:
- 
Preheat air fryer to 390°F. 
- 
Pat roast dry and rub with olive oil, garlic powder, onion powder, thyme, salt, and pepper. 
- 
Air fry for 15 minutes, then lower temp to 325°F and cook until internal temp is 135°F for medium-rare. 
- 
Remove, tent with foil, and rest 10 minutes before slicing. 
Roast the Veggies & Boursin:
- 
Preheat oven to 400°F. 
- 
In a baking dish, toss grape tomatoes and sliced red onion with olive oil, salt, and pepper. Nestle the Boursin cheese in the center. 
- 
Roast for 20–25 minutes, until the tomatoes burst and the cheese is soft and melty. 
Cook the Pasta & Combine:
- 
Meanwhile, cook pasta in salted water until al dente. Reserve 1 cup pasta water, then drain. 
- 
Stir roasted veggies and melted Boursin into the pasta, loosening with reserved pasta water as needed for a creamy coating. 
- 
Add spinach (if using) and Parmesan, stirring until just wilted. 
To Serve:
- 
Divide the pasta among plates and top with slices of juicy air-fried roast beef. 
- 
Finish with extra Parmesan and cracked pepper.
